Vegetarians, shield your eyes (unless you’re small-business enthusiasts who can handle a bit of flesh eating for the sake of free enterprise).
My fellow omnivores, some of you face the same quandary as I do – you love to sink your teeth into some meaty goodness, but you’re uneasy with the water waste, pollution, and superbugs bred by subtherapeutic use of antibiotics in CAFO factory farms. You want to eat locally, sustainably produced meat, but the lottery just hasn’t come through for you.
To you, I most humbly submit the proposition that Vadim Akimenko is the man. He’s a nose-to-tail no-waste butcher who wants to bring meat sustainably raised on local farms to Somerville, at prices working Villens can afford.
Mr. Akimenko is raising funds to open his butcher shop via Kickstarter, a website where people who want to give small business a helping hand can chip in as little as $5 to get things going. Give more, get a fancier thank-you – an autographed butcher’s apron or meat cleaver, cookbooks, or even butchering classes! More information here.
